We love a breakfast that can brighten up our day, or even better, a breakfast that can double as a healthy dessert! We have been on a Strawberry Spring Swing Parfait kick, and we decided it was high time to share this whimsical treat.
One of the great things about this Strawberry Spring Swing Parfait is that you can make it your own, place your own stamp on it, changing it daily to match your cravings. We have been using a strawberry puree as the base of our parfait, but finely chopped fresh strawberries works just as well! We then add a layer of yogurt, using greek style some days and regular vanilla on other days. Lastly, we top with a generous amount of our Spring Swing seasonal trail mixture, which is packed with strawberry flavor from our homemade strawberry sugar and puree, currants, walnuts, almonds, and sunflower seeds. Every spoonful is a balance of sweetness, crunch, fruit, and tang!
